Vegetable Roastie

1 cup boiled potatoes, mashed
Salt, to taste
1/2 tablespoon black pepper, freshly ground
1/2 tablespoon red chili powder (adjust to taste)
1 cup milk
Assorted chopped veggies (bell peppers, onions, carrots, peas, etc.)
1/2 tablespoon baking powder
1 cup wheat flour
Oil, for cooking
Directions:

Prepare the Roastie Mixture:
In a blender or food processor, combine the boiled potatoes, salt, black pepper, red chili powder, and milk. Blend until smooth and well combined.
Add Chopped Veggies and Baking Powder:
Transfer the potato mixture to a mixing bowl and add the chopped veggies of your choice along with the baking powder. Mix thoroughly until all ingredients are evenly incorporated.
Incorporate Wheat Flour:
Gradually add the wheat flour to the mixture, stirring continuously until a sticky and soft dough forms. Ensure that the dough is well mixed to achieve a uniform texture.
Shape and Cook the Roasties:
Brush a pan or griddle with oil and place it over medium heat.
Apply oil to your hands and shape the dough into circle shapes, ensuring they are of uniform thickness.
Carefully place the shaped roasties onto the preheated pan and cook for 4-5 minutes on each side, or until they turn golden brown and crispy.
