In a large bowl, cream together the softened butter, caster sugar, and brown sugar until light and fluffy. . This should take about 3 to 4 minutes using a hand mixer or stand mixer on medium speed.
Add the liquid ingredients:
Add the eggs one at a time to the creamed mixture, beating vigorously after each addition. Add a little of vanilla extract.
Mix the dry ingredients:
In a separate bowl, mix the flour, baking soda, yeast and salt. Add this a little at a time.
Add the dry ingredients to the wet ingredients and mix until ‘they are well mixed.
Add the oats and chocolate chips:
Add the oats, chocolate chips and chopped nuts (if using) to the batter and mix well until evenly distributed. This prevent the oatmeal and chocolate chips from flattening.
Make cookies:
Place small amounts of dough in the shape of balls on the prepared baking sheets, leaving about 5 cm between each. You can use a cookie scoop or tablespoon to make cookies of the same size.
