Layered Cherry and Pistachio Dessert Recipe

1 tablespoon cornstarch
Juice of half a lemon
For the Topping:
Chopped pistachios
Additional whole cherries for garnish
Instructions:
Prepare the Crust:
Mix graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
Press the mixture firmly into the bottom of a springform pan or a glass dish. Chill in the refrigerator for at least 30 minutes to set.
Make the Cream Cheese Layer:
In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, and continue to beat until well combined.
Gently fold in the whipped cream until the mixture is smooth. Spread over the chilled crust and return to the fridge.
Cook the Cherry Layer:
In a saucepan over medium heat, combine cherries, sugar, cornstarch, and lemon juice. Cook until the cherries release their juices and the mixture thickens, about 8-10 minutes. Let cool to room temperature, then chill.
Assemble the Dessert:
Once the cherry mixture is cool, spread it evenly over the cream cheese layer.
Sprinkle chopped pistachios over the top and garnish with whole cherries.
