I’ve cooked this dish six times already this month and it’s still amazing!

1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1/2 teaspoon nutmeg
Directions
1. Preheat your oven to 375°F (190°C).
2. Arrange the peeled and halved onions in a single layer in a large baking dish.
3. Drizzle the onions with olive oil, then sprinkle with salt and black pepper. Toss to coat evenly.
4. Roast the onions in the preheated oven for 25-30 minutes, or until they become tender and start to caramelize.
5. While the onions are roasting, combine the heavy cream, grated Parmesan cheese, minced garlic, thyme, and nutmeg in a mixing bowl.
6. Once the onions are done roasting, pour the creamy Parmesan mixture over them.
7. Return the dish to the oven and bake for an additional 15-20 minutes, or until the sauce is bubbly and the top of the onions are golden brown.

8. Let the dish cool for a few minutes before serving. Enjoy!
