Ingredients
Eight large, fresh beets
1 cup vinegar
1/2 cup sugar
1 1/2 tsp whole cloves
1 1/2 tsp whole allspice
1/2 tsp salt
Instructions
Prepare the Beets:
Start by scrubbing the beets under running water to remove any dirt or impurities.
Cut off the tops, leaving about 1 inch of the stems intact.
Place the beets in a Dutch oven and cover them with water.
Heat the water until it starts to boil, then reduce the heat and let the beets simmer, covered, for 25 to 30 minutes or until they are tender.
Remove the beets from the water and let them cool.
Once they are cool enough to handle, peel and slice the beets and transfer them to a basin.
