1 tsp baking powder
1 tsp salt
3/4 cup water
For the Breading:

1 1/2 cups bread crumbs (panko for extra crunch)
1/2 cup desiccated coconut (optional; can substitute with additional bread crumbs)
For the Glaze:

1 cup freshly squeezed orange juice (from 2 navel oranges or equivalent)
1 tsp orange zest
1/4 cup maple syrup (or honey as a non-vegan option)
3 tbsp soy sauce (use low-sodium if preferred)
2 tbsp rice wine vinegar (or white vinegar)
2 tbsp water
2 tbsp cornstarch + 4 tbsp water (for slurry)
