2 cups of chicken, boiled or roasted into shreds

1/2 cup diced celery

1/4 cup red onion, finely chopped

1/2 cup unseeded grape halves (or dried cranberries)

1/4 cup cut up and toasted almonds (optional)

1/2 cup Mayonnaise

Optional: 2 tablespoons Greek yogurt

One tablespoon Dijon mustard

A tablespoon of freshly squeezed lemon juice

Salt and pepper to taste.

Chopped fresh parsley or dill for garnish.
