Whole Roasted Okra
These whole roasted okra have the flavors of garlic and onion, but also have that lightly charred flavor and texture that I think enhances so many different types of vegetables. Served along with meat or fish they make a wonderful and healthy compliment to the meal. You can also serve these with a bit of ranch or dipping sauce if you like.
Ingredients
1 lb okra, washed and dried, stems trimmed
2 tablespoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
pinch black pepper
Preparation
Preheat oven to 425˚F. Toss all ingredients together in large bowl.
Spread okra mixture on rimmed baking sheet. Bake for 9 minutes then carefully remove from ove. Turn each piece with tongs and return to oven.
Bake for 8-10 minutes or until second side is as crisp as the first. Taste and add more salt and pepper if desired.
