Spicy Shrimp Ramen

2 packs of instant ramen noodles (discard seasoning packets)
12-16 medium shrimp, peeled and deveined
1 cup shredded Napa cabbage or bok choy
1/2 cup carrots, julienned
1/2 cup red bell pepper, thinly sliced
1/4 cup green onions, sliced
1/4 cup fresh cilantro leaves, chopped
Instructions:

Prepare the Broth:
In a large pot, heat the sesame oil over medium heat.
Add the minced garlic and sliced ginger, sautéing until fragrant, about 1-2 minutes.
Pour in the chicken or vegetable broth and bring to a simmer.
Stir in the soy sauce, fish sauce, sriracha (or chili sauce), miso paste (if using), and sugar (if using).
Let the broth simmer for about 10-15 minutes to allow the flavors to meld together. Taste and adjust seasoning as needed.
