Snowball Cookies (Russian Tea Cakes / Mexican Wedding Cookies)

2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup finely chopped nuts (walnuts, pecans, or almonds)
Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy. Add the vanilla extract and mix until well combined.
Add Dry Ingredients: Gradually add the flour and salt to the butter mixture, mixing until just combined. Stir in the finely chopped nuts.
Shape the Cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
Bake: Bake in the preheated oven for 10-12 minutes, or until the bottoms are just starting to turn golden. The cookies should still be pale in color.
Coat with Powdered Sugar: While the cookies are still warm, roll them in powdered sugar to coat. Place them on a wire rack to cool completely
Second Coating: Once cooled, roll the cookies in powdered sugar again to give them a thick, snow-like coating.
Serve or Store: Enjoy your snowball cookies immediately or store them in an airtight container for up to a week.
