In the same skillet with the bacon grease, add the olive oil and heat over medium-high heat.
Add the chicken breasts and cook for 6-7 minutes on each side, or until the chicken is golden brown and cooked through.
Remove the chicken from the skillet and set aside.
4. Sauté the Mushrooms and Garlic:
In the same skillet, add the sliced mushrooms and cook until they are softened, about 5 minutes.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
5. Add Spinach and Cream:
Add the fresh spinach to the skillet and cook until wilted.
Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning.
Cook for 3-4 minutes until the sauce is slightly thickened.
6. Combine and Serve:
Return the cooked chicken breasts to the skillet, spooning the creamed spinach and mushroom mixture over the chicken.
Sprinkle the crispy bacon pieces on top.
