Sausage Gravy

Begin by tearing the breakfast sausage into small chunks, scattering them across a large pan. If using onion, sprinkle it over the sausage evenly. Cook over medium heat, stirring occasionally, until the sausage is fully cooked, and the onion becomes tender. This process usually takes around 8 to 10 minutes.
Lower the heat to medium-low and sprinkle the flour over the sausage, ensuring every piece is well coated. Cook for 2 minutes, stirring now and then, to lightly toast the flour.
Gradually pour in the milk, stirring continuously to create a smooth mixture. Crank the heat up to medium-high and bring the mixture to a boil, allowing it to thicken.
Once the mixture is nicely thickened, reduce the heat to medium-low. Now, it’s time to season your gravy with the seasoned salt, black pepper, and sage or thyme if you’re using it. Let it simmer gently for 8 to 10 minutes, stirring from time to time.
Final taste test! Add salt and more pepper as needed to achieve the perfect balance of flavors. Pour this velvety gravy over warm, fluffy biscuits and serve hot.
