Polish Pork Ribs (Żeberka)

Season and Coat: Wash and cut the pork ribs into pieces, that will fit into the pot. (You can do it with one bone each, or keep them in a medium sized rack). Season with salt and pepper. In a bowl, mix the flour with sweet and hot paprika. Coat the ribs in the flour mixture.
Sear the Ribs: Heat a large pot over medium heat, add 1 1/2 tbsp of oil, and sear the ribs until browned on all sides, about 8 minutes. Remove the ribs and set aside.
Sauté Vegetables: In the same pot, add the remaining oil. Add the diced onion and garlic, and sauté for about 3 minutes. Add the sliced carrots, parsnip, and celery root. Season with salt and pepper, and stir to combine.
Simmer the Ribs: Return the ribs to the pot. Add the soy sauce, honey and enough hot water to cover the ingredients. Cover and simmer for 1 1/2 to 2 hours until the meat is tender and falling off the bone. If the sauce is not thick enough, cook uncovered for a few more minutes to reduce.

Notes
This dish can also be prepared in a pressure cooker for a quicker meal. Simply adjust the cooking time according to your pressure cooker’s instructions.
