My son hosted a small gathering with his friends, and when I served this dish, they couldn’t get enough of it

  • 1 teaspoon pepper
  • 4 large potatoes, thinly sliced
  • 1 cup shredded cheddar cheese
  • Freshly chopped parsley, optional for garnish

Directions

  1. Preheat the Oven: Grease a 9×13 inch baking dish and preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix thoroughly until all ingredients are well combined.
  3. Layer the Casserole: Spread half of the sliced potatoes evenly in the greased baking dish. Shape the meat mixture into a loaf and place it on top of the potato layer. Cover the meatloaf completely with the remaining sliced potatoes.
  4. Cheesy Bake: Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is melted and bubbly. Top with shredded cheddar cheese during the last few minutes of baking.
  5. Serve: Allow the dish to cool slightly before cutting and serving. If desired, sprinkle freshly chopped parsley on top for garnish.
