Mashed Potato In Muffin

Ingredients:
2 cups mashed potatoes (about 3 medium russet potatoes), room temperature
2 large eggs
1/4 cup milk
2 tablespoons unsalted butter, melted
1/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh chives
Instructions:
Preheat oven to 400°F. Grease a 12-cup muffin tin with cooking spray or butter.
In a large bowl, whisk together the mashed potatoes, eggs, milk, melted butter, sour cream, salt and pepper until smooth.
Stir in 1/4 cup of the shredded cheddar cheese and 1 tablespoon of the chives until combined.
Divide batter evenly among the muffin cups, filling each about 3/4 full.
Sprinkle the remaining 1/4 cup cheddar and 1 tablespoon chives over the tops.
Bake for 18-22 minutes until lightly browned on top and set in the middle.
Allow to cool for 5 minutes before removing from pan. Serve warm.
