3 cups dry elbow macaroni
4 tablespoons salted butter
2 cans (12 oz each) evaporated milk
1/3 cup milk of choice (whole, 2%, or plant-based)
2 large eggs
1/4 teaspoon garlic salt
4 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1 teaspoon paprika (optional)
Instructions
1️⃣ Boil the Pasta:
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, about 7-8 minutes. Drain the pasta and return it to the pot.
2️⃣ Coat with Butter:
Add the butter to the hot pasta and stir until melted, ensuring each piece is well-coated. This step adds flavor and keeps the macaroni from sticking.
3️⃣ Prepare the Milk and Egg Mixture:
In a large bowl, whisk together the evaporated milk, regular milk, eggs, and garlic salt until smooth. This mixture will help bind the mac and cheese and make it extra creamy.
4️⃣ Combine Cheeses:
In a separate bowl, mix together the shredded cheddar and mozzarella cheeses for a perfect blend of flavor and meltiness.
5️⃣ Layer the Mac and Cheese:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. Start by layering 1/3 of the buttered macaroni in the bottom, followed by 1/3 of the cheese mixture. Repeat this layering twice, finishing with a generous layer of cheese on top.
6️⃣ Add the Milk Mixture:
Slowly pour the milk and egg mixture over the layered macaroni, allowing it to seep through all the layers for even creaminess.
7️⃣ Sprinkle Paprika and Bake:
For extra color and a hint of spice, sprinkle the paprika over the top. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbling.
8️⃣ Cool Before Serving:
Remove the mac and cheese from the oven and let it cool for a few minutes. This helps the casserole set, making it easier to serve.
9️⃣ Serve and Enjoy:
Dish up this creamy, cheesy goodness and enjoy with your family and friends!
Notes
Breadcrumb Topping: For extra crunch, add a sprinkle of breadcrumbs mixed with a little melted butter on top during the last 10 minutes of baking.
Mix Up the Cheese: Try adding a bit of sharp cheddar, Gruyère, or Monterey Jack for a twist on flavor.
Make it Spicy: Add a dash of hot sauce or a sprinkle of cayenne pepper to the milk mixture for a little kick.
