Famous La Scala Chopped Salad

1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon dry ground mustard
1/4 cup parmesan cheese, grated, plus more for serving
Kosher salt and freshly ground black pepper, to taste
For the salad:
1 head iceberg lettuce, finely chopped
1 head romaine lettuce, finely chopped
1/4 lb Italian salami, julienned
1 cup mozzarella cheese, grated
1 (15 oz) can garbanzo beans, rinsed and drained
Preparation
In a large bowl, whisk together olive oil, red wine vinegar, dry mustard, parmesan, and salt and pepper until well combined.
