In a large bowl, combine the shredded chicken or drained canned chicken, Dijon mustard, egg, breadcrumbs, dried thyme, onion powder, garlic powder, salt, and black pepper. Mix everything together until well combined. The mixture should be moist enough to hold its shape when formed into patties.
Step 2: Form the Fritters
Using your hands, form the chicken mixture into small patties or fritters about 2-3 inches in diameter. If the mixture is too dry, you can add a little more Dijon mustard or a tablespoon of mayonnaise to moisten it.
Step 3: Heat the Oil
In a large skillet, heat about 2-3 tablespoons of oil over medium heat. The oil should be hot but not smoking. You can test it by dropping a small piece of the fritter mixture into the oil—if it sizzles, it’s ready.
Step 4: Fry the Fritters
Place the chicken fritters into the hot oil, making sure not to overcrowd the pan. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside. Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Step 5: Serve and Enjoy
Serve the crispy chicken fritters warm with your favorite dipping sauce, such as ranch, honey mustard, or a spicy aioli. They are perfect as a snack, appetizer, or served alongside a fresh salad for a complete meal.
