Cheesy Beef and Potato Casserole

While the beef is cooking, thinly slice the potatoes. You can use a mandoline slicer for even slices.

Arrange half of the potato slices in an even layer at the bottom of the prepared baking dish.

Make the Cheese Sauce:
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly.
Gradually whisk in the milk and cook until the mixture thickens and comes to a simmer.
Remove the saucepan from heat and stir in 1 1/2 cups of shredded cheddar cheese until melted and smooth.
Assemble the Casserole:
Spoon the cooked beef mixture over the layer of potatoes in the baking dish.
Pour half of the cheese sauce over the beef mixture.
Add the remaining potato slices on top, followed by the rest of the cheese sauce.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Bake the Casserole:
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Serve and Enjoy:
Remove the casserole from the oven and let it cool for a few minutes before serving.
Garnish with fresh parsley if desired.
