1️⃣ In a bowl, mix 2 eggs, 300ml of hot milk, 300ml of warm water, 1 tablespoon of sugar, a pinch of salt, and 10g of yeast. Stir well.
2️⃣ Add 420g of flour to the mixture and stir until well combined. Cover the bowl and let it rest for 15 minutes.
3️⃣ In a separate bowl, cut 3 Zucchinis in half lengthwise and finely chop them. Sprinkle some salt over the courgettes and let them rest for 20 minutes.
4️⃣ After 20 minutes, add a red bell pepper, 1 onion, 3 green onions (all chopped into small pieces), 1 grated potato, and chopped parsley to the mixture.
5️⃣ Squeeze the courgettes to remove excess moisture, then add them to the mixture and mix well.
6️⃣ Heat a pan and pour two portions of the batter into the pan. Spread the batter out evenly.
7️⃣ Cook the pancakes on medium heat until the bottom turns golden brown, then flip and cook the other side until golden brown as well.
8️⃣ Repeat the process with the remaining batter.
Serve the vegetable pancakes hot and enjoy!
