2 large Granny Smith or Honeycrisp apples, peeled, cored, and diced

Put cooling racks on baking sheets lined with wax paper. Set aside.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, mix the milk, eggs, and applesauce until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Fold in the diced apples.
In a large pot or deep fryer, heat canola oil to 375°F (190°C).
Using a large spoon or ice cream scoop, carefully drop spoonfuls of the batter into the hot oil.
Fry the fritters in batches, turning occasionally, until golden brown and cooked through, about 4-5 minutes per batch.
Remove the fritters with a slotted spoon and place them on the prepared cooling racks to drain excess oil.
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the frosting.
While the fritters are still warm, drizzle or dip them in the frosting.
