Apple Fritter Bites

Mix dry ingredients: In a medium bowl, combine the flour, baking powder, cinnamon, and salt.
Mix wet ingredients: In a large bowl, whisk together the sugar and melted butter until well combined. Add the egg, vanilla, and applesauce, mixing until smooth.
Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the diced apples.
Scoop batter: Drop spoonfuls of batter onto the prepared baking sheet, spacing them evenly apart.
Bake and broil: Bake for 10 minutes, then remove from the oven and set the broiler to high.
Make glaze: While the fritters bake, mix the powdered sugar with the apple juice or cider until smooth.
Glaze and broil: Drizzle the warm fritters with the glaze, letting it drip down the sides. Broil for 2-4 minutes, or until the glaze begins to bubble and caramelize. Move the pan around frequently to avoid burning.
Final glaze: Remove from the oven and generously coat the fritters with any remaining glaze.
Cool and serve: Allow the glaze to set for 15 minutes before serving.
