Bananas, like many other fruits, ripen very quickly once you buy them, and it quickly becomes difficult to eat them when they are ripe – but not too ripe.
Banana produces a phytohormone as it ages: ethylene. It is he who encourages it to mature and take on this black color.
Entrapment of the banana prevents ethylene from escaping and thus promotes its ripening. The more space you give the banana, the longer it will keep.
